When I first heard of Acai bowls I was for sure it was a fad food that looked better than it actually taste. I refused to try them because Acai just sounds like it’s “too healthy” to actually taste good and oh my goodness I wasn’t going to spend $10 on a bowl I don’t even know if I like. Still curiosity had me.
It wasn’t until I went on vacation to California that I decided to give it a try. We went to this little place on the beach called the Olive Cafe, do yourself a favor and go there if you’re ever in San Diego. I can’t even begin to describe how delicious their Acai bowl is. My kids wanted to try this mysterious blue stuff and they too fell in love. This is when my addiction started.
I went to our local juice shop to get one shortly after our vacation and cringed when I paid $10 for a small bowl. I thought surely this isn’t too hard to make! I stood there like a kid in a candy store with their face pressed against the glass watching them make the bowls for the next 10 minutes. I learned a lot in those 10 minutes and knew I needed to go home and start recreating this magical bowl of goodness.
I have successfully recreated two bowl that are easy, quick, healthy, and most importantly delicious! Best part my bowls only cost about $2.50 per serving(bowl).
Do you work and need something fast to grab in the morning? This is perfect for you! Make these bowls ahead of time and freeze. Set your container out while you’re cutting up your banana and grabbing your toppings so it can thaw just enough for you to use an ice cream scoop to put it into your container/bowl. EASY! Cut up your strawberries ahead of time and shave your chocolate to make things even easier.
Hope you enjoy!
Both recipes make 2 servings
Berry Acai Bowl
Ingredients
- 1 pouch of frozen Sambazon Acai (you can get it at your local grocery store, Target, or Amazon)
- 1 banana
- 1/2 cup frozen strawberries
- 1/4 cup frozen blueberries or frozen mixed berries (blueberries, raspberries, blackberries)
- 1/2 cup almond milk
- Toppings (see step 6)
- Run your acai pouch under warm water quickly just to separate it from the pouch. Break it up and throw into your blender.
- add the rest of your ingredients and blend. It might take awhile because you want to keep it thick. You may need to scrape down the sides. If your blender is struggling to blend it add a splash more of your almond milk. You don’t want it runny though so watch it closely
- pour into your bowl and spread it out evenly
- freeze for 5 minutes
- cut up fresh strawberries and banana while it’s freezing
- take your bowl out and top to your liking. I like bluberries, strawberries, banana, granola, chia seeds, shredded coconut, and honey
