Guys, this is the best Kale salad hands down. I was one to steer clear of kale until I had a kale salad at a friends house and found elements of it to be quite delicious. I immediately went home and tried to create the best kale salad.
I’m anemic, which means I have to be conscious of my iron intake. Kale is a great way to get more iron in your diet the natural way. I want to be healthy for my kids and myself, however I don’t want to force myself to eat something I despise. I worked tiredly on this dressing until I got it perfect because lets be honest, dressings are what really make the salad.
This will be the easiest and one of the healthiest salads you will make. It’s very affordable too which makes it even better. Enjoy!
Apple Cranberry Kale Salad
Ingredients
-Kale
-Honeycrisp Apple, diced
-Craisins
-Feta
-Red Onion (I can leave or take it)
Dijon Lemon Dressing
Ingredients
-1 clove Garlic, minced
-5 Tb EVOO
-1 1/2 Tb Dijon Mustard
-1 Tb Honey
-1 1/2 Fresh Lemons, squeezed
-Dash of Salt & Pepper
Whisk all ingredients together. If the dressing is too lemony, add a small squeeze of Dijon to balance it out. If it is too sour add a few more drops of honey. Coat the salad, minus the cheese, 10-15 minutes prior to serving so the Kale absorbs some of the dressing. Add the cheese right before serving.
