I might be in the minority here but I really don’t like pork. I’ve never liked bacon, I know I know I’m weird, or any tenderloins. I’ve only found three types of pork I will eat…BBQ pulled pork, Pulled Pork tacos, and these amazing italian pork chops my mom used to make me as a kid.
Not liking pork is unfortunate because it’s always on sale and most of the time it’s the cheapest cut of meat. It’s also nice to switch it up a bit since we eat a lot of beef and a little bit of chicken. When pork chops go on sale, which ours usually go for buy 1 get 2 free, I stock up and make these bad boys. You can make them with either bone in or boneless chops.
Tip: make sure bottom is slightly browned before flipping. You don’t want it to be too brown because it will brown more in the oven. The purpose of frying it first is to give it a crispy outer layer.
This definitely isn’t a meal you’re whipping up in 30 minutes so make plenty for leftovers. I can usually get 2-3 meals out of this including lunches for my husband. Can I also add that my kids actually like this because of the sauce. I usually make a side of pasta and pour the sauce over their pasta with diced up pork, resembling an Alfredo.
