Everyone loves pizza right!?!? I’m not the biggest fan, because I’m so dang picky, but one thing I do love is a good warm soup. As we enter into fall I’m dreaming about all things soup and comfort.
When my family owned an Italian restaurant, one of my favorite dishes was the pizza soup. Having little kids, I knew this was something I needed to make for them.
It can be altered just like you would your favorite pizza to include those must have toppings. The recipe I have come up with supplies you with a basic but super yummy soup you can add to.
When we closed the doors to the restaurant a lot of the recipes went with it, except for the family ones we’ve grown up with. I had a basic, this is what was in the soup recipe card, however there were no measurements of any type. After trial and error I believe I have recreated such an amazing, comforting recipe.
Pizza Soup
Cook time: 45 mins
Serves 8-10
Ingredients
- 16 oz Beef or Chicken stock (low sodium)- I prefer beef
- 1 lb uncased Italian sausage (I prefer sweet but you can use mild as well)
- 1 lb ground beef
- 1 yellow onion, diced
- 2 cans diced tomatoes
- 4 garlic cloves, minced
- 2 tsp basil
- 1 1/2 tsp parsley
- 1/2 tsp red pepper
- 1/4 cup tomato sauce
- 2 1/2 tsp oregano
- 1/4 cup Parmesan cheese
- 2 TB Extra Virgin Olive Oil
- pinch of salt and pepper
- Mozzarella for topping
- Saute onions and garlic in 2TB of EVOO in a soup pot
- Cook meat in a separate pan. Drain and add to soup pot
- Add all other ingredients and bring to boil. Reduce heat and let simmer for at least 30 minutes.
- Taste soup to determine if it needs more salt. Be sure to taste with the meat, because it tends to be saltier.
- Top with mozzarella and serve.
If you would like to cook in a crock pot you can definitely do so. Pre cook meat, then add with all other ingredients to the crock pot. Cook on low for 6-7 hours or high for 3-4.
