Every summer my mom would go buy strawberries in bulk during peak season. Whenever there were lots of strawberries she served this amazing strawberry poppyseed salad.
This has always been a favorite of mine and is perfect when the heat rises. I hate turning on the oven or standing over a grill when we start reaching above 100 degrees so this salad is a great go during the summer months. Can I just say it’s a pretty salad to look at as well.
Summer Strawberry Salad
Ingredients
-Spring Salad Mix
-Cherry Tomatoes
-Red Onions, diced
-Strawberries, sliced
-Feta Cheese
-Dash of Salt & Pepper
Poppyseed Dressing
Ingredients
-1/2 cup EVOO
-1/2 cup Sugar
-1/4 cup Cider Vinegar
-1/4 tsp Worcestershire Sauce
-1 tsp Poppyseeds
-1 tsp Sesame seeds
-1/2 tsp Yellow Onion, minced
-Pepper
Whisk ingredients all together well. Freezes well for later use. Keep in mind you will need to store the dressing in the fridge to keep longer, however it will solidify so let it sit for at least an hour before serving and shake well before serving.
