Breakfast time is crucial in our house. It’s the one time I know all my kids are going to eat, so I want to make sure they are getting a lot of calories and something that’s healthy to help them get through the day. They would eat eggs every day if I let them, but that feels very dull day after day. Their next go to is pancakes.
I’ve never been one to buy prepackaged, overly processed foods but making pancakes more than once a week makes me exhausted. I don’t have time to spend the morning standing over a pan on the stove cooking 1-2 pancakes at a time while creating a mess of pancake batter everywhere.
I started making pancakes once a week/every other week and freezing a whole batch so they could have pancakes whenever they wanted to, but didn’t require hours of cooking and cleaning nor do I have to hear “when’s it going to be ready” or “mom, I’m starving” over and over again.
I went through tons of different recipes until I crafted the perfect one. These pancakes are a mix of flap jacks and fluffy. Fluffy pancakes don’t freeze and thaw very well and flap jacks are hard to get apart when frozen without broken.
These pancakes also don’t have any sugar in them. I use honey, or agave, to give them their sweetness.
This recipe makes a lot to allow for freezing, or to feed a large party. I started making the batter in a blender which means less mess, less bowls and utensils, even mixing, and easy pouring. Seriously, why didn’t I think of this before! My favorite blender is the Ninja. I have made soups, salsa, smoothies, you name it! The blades stay forever sharp and is truly the best blender on the market. If you can afford it I recommend getting the Blender and Food Processor bundle. This wasn’t available when we got our blender otherwise we would’ve done so. We ended up spending more on a food processor later.
I hope you enjoy this recipe and have fun creating different flavors. My kids all like different ones: one prefers original, one likes chocolate chips, and my baby loves fresh blueberries. Some tips for creating the best pancakes:
- make sure the pan is hot before putting in your batter. When I use a griddle I have it on 315 degrees.
- butter your pan well in between each pancake if you’re not using non-stick. I only butter once when using non-stick…more so for the flavor
- don’t flip your pancakes until you see bubbles appear in the pancakes which are shown below
- let the pancakes reach room temperature before packing them into a baggie to freeze
