I’m always trying to find quick meals that don’t lack in taste. One of our favorites are homemade pizzas. Growing up, we hand rolled the pizza dough, made the sauce, and went all out. As much as I love it I don’t have the time usually to make that.
After trial and error I came up with this easy to make pizza you can use either pita bread, flat bread, or tortillas for. If you’re a crispy thin crust lover go with a tortilla. If you like a little thickness then pita bread if your winner.
The toppings can easily be altered based on your likes and pantry supplies. When I have leftover chicken I throw it on my husbands pizza. I’ve also found I love some spinach and sun-dried tomatoes as well.

- 2 Pita bread or Tortilla
- 2-4 TB Basil Pesto w/ garlic I use Classico
- 1/2 cup Shredded Mozzarella
- 1 Red Onion cut in strips
- 4-5 Marinated Artichoke Hearts Diced
- 1/4 cup Feta Cheese
- 1 TB Olive Oil
- Salt & Pepper
- Additional toppings: olives, spinach, sundried tomatoes, ricotta, chicken

Line a baking sheet with foil. Preheat oven to 400

Heat a pan on the stove with olive oil. Add in sliced onions and cook on medium until soft. Add salt & pepper

While onions are cooking, spread pesto on your choice of pizza crust. See above for crust descriptions to choose what you like best.

Sprinkle mozzarella cheese on pizzas til lightly covered. Top with cooked onions, then diced artichokes

Top with any additional toppings you may like then finish with feta cheese

Place in oven until sides are crispy and cheese is browning. Pita bread takes 15-19 minutes and tortillas take 12-16
