Garlic Pesto Pizza

Servings 2 personal pizzas

Ingredients

  • 2 Pita bread or Tortilla
  • 2-4 TB Basil Pesto w/ garlic I use Classico
  • 1/2 cup Shredded Mozzarella
  • 1 Red Onion cut in strips
  • 4-5 Marinated Artichoke Hearts Diced
  • 1/4 cup Feta Cheese
  • 1 TB Olive Oil
  • Salt & Pepper
  • Additional toppings: olives, spinach, sundried tomatoes, ricotta, chicken

Instructions

  1. Line a baking sheet with foil.  Preheat oven to 400

  2. Heat a pan on the stove with olive oil.  Add in sliced onions and cook on medium until soft.  Add salt & pepper

  3. While onions are cooking, spread pesto on your choice of pizza crust.  See above for crust descriptions to choose what you like best.

  4. Sprinkle mozzarella cheese on pizzas til lightly covered.  Top with cooked onions, then diced artichokes

  5. Top with any additional toppings you may like then finish with feta cheese

  6. Place in oven until sides are crispy and cheese is browning.  Pita bread takes 15-19 minutes and tortillas take 12-16
